Ingredients

2 lb. bananas (7 or 8 peeled)
1/2 lb. raisins
1 lb. onions
1 lb. brown sugar
1/2 lb. chopped dates
2 tsp. level salt
2 tsp. level turmeric
1/2 tsp. level ground ginger
3 3/4 c. cider vinegar
Preparation

Soak raisins in the vinegar overnight.
Put chopped onions and dates into pan with peeled and sliced bananas.
Add the soaked raisins and vinegar, sugar, salt, turmeric and ginger.
Bring mixture to a boil.
Simmer for approximately 1 hour, stirring frequently.
Bottle and cover in hot sterilized jars.
Makes approximately 5 pounds.
