Salmon Salad Loaf - cooking recipe
Ingredients

1/2 c. celery, chopped fine
1 Tbsp. vinegar
1/2 cucumber, chopped
1/2 cucumber, sliced thin
2 envelopes unflavored gelatin
1 (15 1/2 oz.) can red salmon, drained and partially flaked
1 tsp. salt
1 c. boiling water
1/2 c. cold water
1/8 c. lemon juice
Preparation

Sprinkle gelatin over cold water.
Stir until softened.
Add boiling water.
Add lemon juice, vinegar, salt, vegetables and then, gently and keeping small chunks intact, mold the salmon. Refrigerate until firm.
Serve on lettuce with a dollop of mayonnaise or yogurt.
