Raw Potato Pancakes - cooking recipe

Ingredients
    3 medium-size raw potatoes, washed, pared and grated
    2 eggs, separated
    1 1/2 Tbsp. flour
    1/2 tsp. baking powder
    1 tsp. salt
Preparation
    Beat egg yolks; stir in grated potatoes and a mixture of the flour, baking powder and salt; mix well.
    Beat the egg whites until rounded peaks are formed.
    Fold into the potato mixture. Spoon about 2 tablespoons of batter for each pancake into hot fat in skillet.
    Brown on both sides.
    Serve with applesauce or molasses, if you like.
