Carrot Cake - cooking recipe

Ingredients
    1 c. carrots
    1 c. honey
    1 c. water
    1 c. raisins, dates or combination
    1/2 c. butter
    1/2 tsp. ground cloves
    1 tsp. cinnamon
    1 tsp. nutmeg
    2 c. whole wheat pastry flour
    2 tsp. baking soda
    3/4 c. coarsely chopped walnuts
Preparation
    Combine
    the first 8 ingredients.
    Bring to a boil; let it boil
    for
    5
    minutes.
    Set
    it
    aside;
    let it cool for 45 minutes.
    Combine the last 3 ingredients (being careful to get lumps
    out\tof baking soda).
    Make a hole in the center of dry mixture;
    pour liquid mixture into it.
    Mix well.
    Pour into a well
    buttered
    10-inch
    spring-form pan.
    Bake at 325\u00b0 for 40 minutes.
    Cool
    for
    15
    minutes.
    Serve warm with vanilla ice cream or whipped cream.
