Roast Beef With Wine And Vegetables - cooking recipe

Ingredients
    5 to 6 lb. lean roast beef
    few sprigs parsley
    oregano
    1/2 c. olive oil
    3 to 4 cloves garlic, peeled
    salt and pepper to taste
    2 c. white wine (dry)
    4 to 5 peeled potatoes
    5 to 6 peeled carrots
    3 skinned onions
Preparation
    Make a few slits with a sharp knife in the roast.
    Insert 1 garlic clove and parsley sprig in each hole.
    Pour wine and olive oil over meat.
    Sprinkle generously with salt, pepper and oregano. It is safest to use a meat thermometer to obtain the desired degree of doneness.
    Bake at 350\u00b0 for three hours or until done.
