Parsley Potato Pancakes - cooking recipe

Ingredients
    2 1/2 c. potatoes, peeled and grated
    3 eggs
    2 Tbsp. flour
    1 Tbsp. onion, grated
    1 tsp. salt
    3 Tbsp. parsley, chopped
    oil
    sour cream
Preparation
    Squeeze the grated potatoes in a towel until fairly dry.
    Mix with the eggs, flour, onion, salt and parsley.
    Heat a heavy pan or griddle.
    Add a light coating of oil.
    Ladle on the mixture and form pancakes.
    Cook until brown.
    Turn and cook on the other side (about 4 to 6 minutes a side).
    Garnish with sour cream.
    Makes 2 to 3 servings.
