Zucchini Potato Soup - cooking recipe

Ingredients
    2 Tbsp. grated onion
    2 Tbsp. margarine
    2 c. chicken broth
    1/4 c. + instant mashed potatoes
    1 tsp. salt
    1/4 tsp. pepper
    1/8 tsp. parsley
    1 c. evaporated milk
    1 c. grated zucchini
Preparation
    Saute onion in butter.
    Add broth and heat to boiling.
    Remove from heat and beat in 1/4 cup potatoes (add more, if needed to thicken mixture), salt, pepper and parsley.
    Beat in milk.
    Add zucchini.
    Simmer and stir for 15 minutes.
