Potato Scramble - cooking recipe
Ingredients

6 slices bacon, diced
2 c. potatoes, diced and cooked
1 medium onion, diced
1 tsp. salt
1/4 tsp. pepper
4 eggs, beaten
Preparation

Fry bacon until crisp; drain off all but 3 tablespoons fat. Cook and stir potatoes, onion, salt and pepper in fat until browned.
Pour eggs in skillet.
Cook uncovered until eggs are thickened.
Serves 4. (Substitution:
Cooked potatoes is equal to 1 (9-ounce) package of frozen French fried potatoes, diced.)
