Apple Pudding - cooking recipe

Ingredients
    1 1/2 c. cooking apples, peeled and diced (approximately 2 large apples)
    1/4 c. butter
    3 c. white bread cubes, remove crust
    1/2 c. sugar
    2 c. hot milk
    1 tsp. grated lemon rind
    1/2 c. chopped dates
    1/4 tsp. salt
    1 tsp. vanilla
    3 eggs, separated
    1/4 tsp. nutmeg
Preparation
    Preheat oven to 350\u00b0.
    Cook apples with butter in a saucepan until barely tender.
    Do not overcook.
    Combine undrained apples with bread, sugar, milk, lemon rind, dates, salt and vanilla. Beat egg yolks with a fork and stir into bread mixture.
    Set aside.
    Beat egg whites until stiff.
    Fold into bread mixture. Pour into greased 2-quart glass casserole; sprinkle with nutmeg. Place casserole in a large pan containing 1-inch deep hot water. Bake 45 to 55 minutes or until set.
    Serves 6 to 8.
