Brown Rice Salad With Grilled Chicken - cooking recipe

Ingredients
    3 c. cooked brown rice
    2 c. cubed grilled chicken breast
    2 medium tart apples, diced
    1 medium sweet red pepper, diced
    2 celery ribs, finely chopped
    2/3 c. chopped green onions
    1/2 c. chopped pecans
    3 Tbsp. minced fresh parsley
    1/4 c. vinegar
    3 Tbsp. olive or canola oil
    1 Tbsp. lemon juice
    1 tsp. salt
    1/4 tsp. pepper
Preparation
    In a large bowl, combine the first 8 ingredients.
    In a jar with a tight-fitting lid, combine the vinegar, oil, lemon juice, salt and pepper; shake well. Pour over rice mixture and toss to coat.
    Serve immediately or refrigerate.
