Creole Red Beans - cooking recipe

Ingredients
    2 c. red beans
    1/2 lb. cured ham, sliced and diced
    1/4 c. salad oil
    2 medium sized onions, chopped
    2 Tbsp. flour
    1 can tomato sauce
    1/4 tsp. red crushed pepper
Preparation
    Soak red beans in about 6 cups of cold water overnight.
    In a large pot, saute ham in salad oil until lightly browned.
    Add chopped onions.
    Saute until transparent, but not brown, stirring constantly.
    Add red beans and more water to cover.
    Cook over low heat 2 to 3 hours.
    Stir occasionally to prevent from sticking, also add more water if necessary.
    When beans are done, mix flour with tomato sauce, stirring to make a smooth paste and stir into beans.
    Add red pepper.
    Simmer for 15 minutes more.
    Serve over cooked rice.
    Makes 8 servings.
