Low-Fat Eggplant Parmesan - cooking recipe

Ingredients
    1 sliced eggplant
    1 onion (large), cut into chunks
    2 cloves chopped garlic
    2 c. chopped tomatoes
    1/4 c. chopped parsley
    1 tsp. oregano
    2 tsp. basil
    2 Tbsp. grated Parmesan cheese (for sprinkling)
Preparation
    Slice eggplant and place in a tray style pan.
    Spray pan with olive oil spray.
    Bake at 350\u00b0 for 10 minutes.
    Turn.
    Bake for 10 more minutes.
