Chicken Breast Chunks With Mushrooms And Lemon - cooking recipe

Ingredients
    1 whole chicken breast, skinned and deboned
    1/2 tsp. salt
    1/4 tsp. black pepper
    2 Tbsp. olive or vegetable oil
    1 clove garlic, crushed
    1/2 lemon, cut into thin slices with rind
    6 fresh mushrooms, quartered
    1/4 c. dry white wine
    1/4 tsp. oregano
    1 tsp. fresh, chopped parsley
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Cut chicken into bite size chunks and season with salt and pepper.
    Heat oil in skillet; add chicken and brown all over.
    Add garlic and saute 5 minutes over medium heat.
    Turn chicken pieces over.
    Add lemon slices, mushrooms, wine, oregano and parsley. Season lightly with salt and pepper.
    Cook chicken over low heat, partially covered, for 10 minutes.
    Serve with favorite vegetable.
