Sausage-Lentil Soup - cooking recipe
Ingredients

8 oz. hot Italian turkey sausage
4 c. chicken broth
4 c. water
1 lb. dried lentils, sorted and rinsed (2 1/2 c.)
1 (14 1/2 oz.) can Italian-style diced tomatoes
1 c. chopped onions
2 tsp. minced garlic
1/2 c. small tube pasta
1 bunch fresh spinach, chopped
Preparation

Cook sausage in 1 cup water, breaking up as it cooks.
Drain. Add broth, water, lentils, tomatoes, onions and garlic.
Cover and bring to a boil over high heat.
Reduce heat to low and simmer 45 minutes, stirring occasionally, until lentils are almost tender. Stir in pasta.
Cook 8 to 10 minutes until lentils and pasta are tender.
Stir in spinach and cook 2 to 3 minutes longer, until tender.
Serve hot sprinkled with Parmesan cheese.
