Fresh Carrot Soup - cooking recipe

Ingredients
    2 slices bacon, diced
    1/4 c. chopped onion
    1 clove garlic, crushed
    2 (13 3/4 oz.) cans condensed chicken broth
    2 c. chopped carrots
    1 c. diced potatoes
    1 medium tomato, chopped
    1 tsp. salt
    dash of white pepper
Preparation
    Cook and stir bacon, onion and garlic in large saucepan until bacon is crisp.
    Stir in remaining ingredients.
    Heat to boiling; reduce heat.
    Simmer uncovered until vegetables are tender; 15 to 20 minutes.
    Pour mixture into blender and cover.
    Blend on high until smooth.
    If thinner consistency is desired, stir in water or chicken broth.
    Garnish with sour cream, snipped parsley or shredded carrot, if desired.
