Spicy Chicken And Rice - cooking recipe

Ingredients
    6 skinned half chicken breasts
    3/4 c. onion, chopped
    3 garlic cloves, chopped
    1 Tbsp. oil
    1 1/2 c. chicken broth
    1 c. picante sauce or salsa
    1 c. rice (uncooked)
    1 avocado, sliced (optional)
    1 tomato, diced
    1/2 c. grated cheese
Preparation
    Season chicken.
    In large skillet, saute onion and garlic 2 minutes.
    Add picante and broth; bring to boil.
    Add rice.
    Place chicken on top of rice.
    Cover and simmer 25 minutes.
    Remove from heat; let stand until liquid is gone.
    Serve with avocado, tomato and cheese on top.
    May serve with olives and sour cream, if desired.
