One Gallon Potato Salad - cooking recipe
Ingredients

6 lb. potatoes, diced and cooked
4 oz. pimentos
4 oz. green pepper
8 eggs
1/2 c. onion, chopped
3 c. mayonnaise
1/4 c. mustard
1/4 c. white vinegar
salt and pepper to taste
Preparation

If you prefer, you may omit the vinegar and use pickle relish to taste.
Dice all ingredients and toss with mayonnaise and mustard.
Chill.
Serves 25 to 30.
