Stilton Soup - cooking recipe

Ingredients
    2 oz. butter
    1 onion, finely chopped
    2 sticks celery, sliced
    1 1/2 oz. flour
    3 Tbsp. dry white wine
    1 1/2 pt. chicken stock
    1/2 pt. milk
    4 oz. Blue Stilton cheese, crumbled
    2 oz. Cheddar cheese, grated
    salt and freshly ground black pepper
    4 Tbsp. double cream
    croutons to garnish
Preparation
    Melt butter in saucepan.
    Add vegetables, fry gently for 5 minutes.
    Stir in the flour and cook for 1 minute.
    Remove from heat.
    Stir in wine and stock.
    Return to heat, bring to boil and simmer 30 minutes.
    Add milk and cheeses, stirring constantly. Season; stir in fresh cream.
    Rub through sieve or puree in blender.
