Ingredients

3/4 lb. fresh or frozen shrimp in shells
1/2 c. unsweetened pineapple juice
2 tsp. cornstarch
2 Tbsp. cooking oil
6 c. torn, fresh spinach
12 cherry tomatoes, halved
Preparation

Thaw shrimp, if frozen.
Shell and devein shrimp.
Halve shrimp lengthwise.
