Blackened Fish Spice Mix - cooking recipe

Ingredients
    4 Tbsp. paprika
    3 Tbsp. salt
    4 tsp. onion powder
    4 tsp. granulated garlic
    4 tsp. red pepper (cayenne)
    1 Tbsp. white pepper
    1 Tbsp. black pepper
    2 tsp. thyme
    2 tsp. oregano
Preparation
    Use 1/2-inch fillets of redfish, golden tile, snapper or grouper.
    Heat cast-iron skillet until white hot.
    Coat fish fillets with melted butter and sprinkle with spice mix until well coated on each side.
    This recipe makes about 1 cup and will keep very well in sealed container.
