Watermelon Pickles - cooking recipe

Ingredients
    watermelon rind and red meat
    ginger water
    4 Tbsp. salt in 1 qt. water
    1 qt. vinegar (to 7 lb. melon)
    4 lb. sugar
    cinnamon bark
    cloves
    mace
    ginger root
Preparation
    Cut off rind and red meat.
    Soak overnight in salt water. Soak overnight in clear water.
    Then boil in strong ginger water after weighing.
