Heart Healthy Carrot Cake - cooking recipe
Ingredients

egg substitute to equal 3 eggs
2 c. sugar or less
3/4 c. vegetable oil
3/4 c. buttermilk
2 c. flour
2 tsp. vanilla
2 tsp. baking soda
1 tsp. cinnamon
1 (8 oz.) can crushed pineapple
2 c. shredded carrots (about 4)
1 c. raisins, chopped
1 c. nuts
Preparation

Mix sugar, egg substitute, oil, buttermilk and vanilla.
Sift together flour, soda, cinnamon and salt, if desired.
Mix well with liquids.
Add pineapple, carrots, nuts and raisins.
Pour into greased and floured 9 x 13-inch pan and bake at 325\u00b0 for 55 minutes.
