Refrigerator Bran Muffins - cooking recipe
Ingredients

2 1/2 c. all-bran cereal
1 1/4 c. dark or golden raisins
1 c. boiling water
1/2 c. white sugar
1/2 c. corn oil
1 c. molasses
2 eggs, well beaten
2 c. buttermilk or you can use regular milk for a lighter product
2 1/2 c. enriched flour
2 1/2 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
Preparation

Combine 1 cup of the cereal with all the raisins.
Pour boiling water over them and set aside to cool.
Combine sugar and oil in a very large bowl.
Stir in molasses, eggs, milk and remaining cereal one at a time.
Mix together the flour, baking soda and salt and add this to the batter.
Add cooled raisin and bran mixture.
Batter is now ready for use or can be refrigerated for future use.
Store in quart jars up to 2 months.
Recipe can be doubled.
Spoon batter into greased muffin pans, 2/3 full. Bake in 400\u00b0 oven exactly 20 minutes.
Allow to cool slightly in pan before removing.
