Greek Onions(6 Servings) - cooking recipe

Ingredients
    3 Vidalia onions
    1 (10 oz.) pkg. frozen chopped spinach
    1 c. Ricotta cheese
    1/2 c. Feta cheese
    1 Tbsp. Italian herbs
    1/4 tsp. cayenne pepper
    2 eggs, beaten
    2 Tbsp. flour
    1/2 c. grated Swiss or Parmesan cheese
    4 slices cooked bacon, crumbled
Preparation
    Slice onions into 1/2-inch slices.
    Layer in bottom of 10-inch pie plate that has been prepared with nonstick vegetable spray. Thaw, drain and squeeze all water from spinach.
    Mix the next 7 ingredients together.
    Pour over onions.
    Top with grated Swiss or Parmesan cheese and bacon.
    Microwave, uncovered, at High power for 10 to 15 minutes, turning dish 1/4 turn every 3 to 4 minutes. Let stand 5 minutes before serving.
