Zucchini Casserole - cooking recipe
Ingredients

2 large carrots, shredded
1 large onion, chopped
3 small or 2 large zucchini
1 can mushroom soup or 2 c. homemade mushroom soup
1 c. soy mayonnaise or regular
3 c. seasoned bread crumbs (may use 2 1/2 c.)
Preparation

Saute onion and carrots in margarine or water until tender. Add mushroom soup and mayonnaise.
Mix well.
Wash zucchini and cut in cubes.
Steam zucchini until tender.
Drain and add to the sauteed mixture.
Add the bread crumbs.
Put in baking dish.
Bake at 350\u00b0 for 30 to 45 minutes.
Makes 8 servings.
