Cheese Muffins - cooking recipe
Ingredients

2 c. sifted flour
2 1/2 tsp. baking powder
2 Tbsp. sugar
3/4 tsp. salt
1 egg, well beaten
3/4 c. milk
1/2 c. melted shortening
1/2 c. shredded cheese
Preparation

Measure flour; add baking powder, sugar and salt.
Sift again. Combine egg and milk and add all at once to flour mixture.
Add shortening.
Stir until dry ingredients are dampened (batter will be lumpy).
Add cheese.
Spoon into greased muffin pans, filling each 2/3 full.
Bake at 400\u00b0 for 25 minutes.
Makes 12 muffins.
