Red'S Pepper Relish - cooking recipe

Ingredients
    12 large red bell peppers, chopped
    1 Tbsp. salt
    6 large tomatoes, peeled and chopped
    2 large chopped onions
    1 1/2 c. sugar
    1 c. cider vinegar
    2 Tbsp. mixed pickling spices
Preparation
    Layer pepper with salt in a glass bowl.
    Allow to stand at room temperature, stirring several times, 3 hours.
    Drain peppers well to remove all liquid.
    Mix drained peppers, tomatoes and onions in a large pot.
    Stir in sugar and vinegar.
    Tie spices in a cheesecloth and crack with a hammer.
    Place in pot.
    Bring to a boil, stirring often.
    Lower heat and simmer for 30 minutes, stirring often.
    Remove spice bag.
    Ladle into hot, sterilized jars and seal.
