Zucchini Yeast Rolls - cooking recipe
Ingredients

1/2 c. zucchini, cooked and mashed
1/4 c. sugar
1/2 tsp. salt
1 yeast cake
2 1/2 c. flour
1/4 c. shortening
1/2 c. scalded milk
1/4 c. warm water
Preparation

Combine zucchini, sugar, salt and shortening with milk.
Heat to lukewarm.
Dissolve yeast in lukewarm water and add to milk mixture.
Add flour and mix well.
Dough will be soft.
Let rise until double in bulk.
Knead and shape into pan rolls.
Let rise again.
Bake at 375\u00b0 for 20 to 25 minutes.
They freeze well.
