Tabooley Salad - cooking recipe

Ingredients
    3/4 c. cracked wheat (bulgur)
    1 1/2 c. snipped, fresh parsley
    3 medium tomatoes, chopped
    1/3 c. chopped green onions (with tops)
    2 Tbsp. snipped fresh mint or 2 tsp. crushed dried mint
    1/4 c. olive oil
    1/4 c. fresh squeezed lemon juice
    1 tsp. salt
    1/4 tsp. pepper
    iceberg lettuce
Preparation
    Cover cracked wheat with cold water; let stand 30 minutes. Drain the water; press out as much water as possible.
    It is best to take handfuls and squeeze the water out.
