Low-Fat Shrimp Vera Cruz - cooking recipe

Ingredients
    1/2 c. cooked long grain white rice
    1/2 c. drained sliced mushrooms
    1/4 c. salsa
    3 oz. cooked medium shrimp
    3/4 oz. fat-free Cheddar cheese or regular Cheddar
    chopped fresh parsley for garnish
Preparation
    In a small bowl, mix all ingredients except cheese and parsley. Transfer to small microwave dish.
    Sprinkle with cheese. Microwave on High 1 minute or until heated through and cheese melts.
    Garnish with parsley.
