Red Bell Pepper Soup - cooking recipe
Ingredients

4 medium red bell peppers
2 leeks (white part only)
1 medium carrot, sliced
1 medium onion, chopped
3 Tbsp. butter
2 c. chicken broth
2 c. whipping cream
salt and white pepper to taste
Preparation

Saute vegetables until softened.
Add broth and cream.
Lower heat and simmer 30 minutes.
Puree in blender.
Simmer soup 15 minutes or more.
Season with salt and pepper to taste.
