Easy Applesauce Muffins - cooking recipe

Ingredients
    1 stick margarine, softened
    1 egg
    2 c. plain flour
    1 tsp. cinnamon
    1 tsp. baking soda
    1 (8 oz.) can or jar unsweetened applesauce
    1 c. sugar
    1/2 tsp. vanilla
    1 tsp. allspice
    1/2 c. pecans, finely chopped (optional)
Preparation
    Cream the margarine, sugar, egg and vanilla in mixing bowl. In separate bowl, combine applesauce and baking soda; add to creamed mixture with dry ingredients (batter will be stiff). Store batter in covered container in fridge until ready to bake. Fill muffin cups 2/3 full; bake at 400\u00b0 for 10 minutes.
    Yields 12 to 15 muffins.
