Confetti Scalloped Potatoes - cooking recipe

Ingredients
    1/2 c. margarine
    1/2 c. chopped onion
    2 Tbsp. pimento, chopped
    1 can cream of mushroom soup
    1 soup can milk
    1 c. cheese crackers, divided
    1 (16 oz.) pkg. frozen hash brown potatoes
    1 small green pepper, chopped
    dash of pepper
    1 c. shredded Cheddar cheese
Preparation
    In skillet, melt margarine over medium heat.
    Saute onion until tender.
    Stir in potatoes, soup, milk, green pepper, pimento, pepper and half of the cheese crackers.
    Pour into shallow 9 x 13-inch dish.
    Top with remaining crackers and crumbs. Bake at 375\u00b0 for 35 to 40 minutes.
    Makes 6 to 8 servings.
