Citrus Poached Orange Roughy - cooking recipe

Ingredients
    4 (6 oz.) orange roughy fillets
    cooking spray
    1/2 tsp. grated orange rind
    1/3 c. fresh orange juice
    2 Tbsp. lime juice
    1/4 tsp. crushed red pepper flakes
    2 Tbsp. chopped green onions
Preparation
    Arrange fish in a single layer in a 13 x 9 inch baking dish coated with cooking spray. Combine orange rind and next 4 ingredients in a small bowl, stirring well. Pour mixture over fish and bake at 400\u00b0 for 20 minutes or until fish flakes easily with fork. Remove fish from dish with a wide spatula and place on a serving dish. Sprinkle with green onions. Makes 4 servings. 130 calories, 3 grams cholesterol, 1.3 grams fat, 25.2 grams protein.
