Watermelon Rind Pickles - cooking recipe

Ingredients
    7 lb. fruit
    1 qt. vinegar
    3 lb. sugar
    spice to taste
Preparation
    Place rind in salt for 3 days.
    Remove from brine and let stand in fresh water for 24 hours.
    At the end of this time, drop in scalding hot alum water for a few minutes, then in cold water and wipe dry.
