German Potato Salad - cooking recipe

Ingredients
    8 boiled potatoes (boiled in skins)
    1 stalk celery, diced
    2 hard-boiled eggs, sliced
    1 large onion, minced
    1 tsp. minced parsley
    2 eggs, well beaten
    3/4 c. sugar
    1/2 c. vinegar and 1/2 c. water, mixed
    1/4 tsp. dry mustard
    1/2 tsp. salt
    1/4 tsp. pepper
    4 slices cooked bacon, diced (reserve bacon fat)
Preparation
    Peel potatoes and slice. Add celery, sliced eggs and onion. Beat eggs and add sugar, spices and vinegar mixture.
    Mix well. Pour egg mixture into hot bacon fat and stir until mixture thickens.
    Pour over potatoes and mix lightly. Top with bacon. Serve warm or chilled.
