African Ugali - cooking recipe

Ingredients
    1 c. water
    1 tsp. salt
    1 c. milk
    1 c. white cornmeal
Preparation
    Bring water and salt to a boil.
    In a bowl, stir milk into cornmeal until smooth.
    Slowly pour cornmeal paste into boiling water, stirring for a few minutes until mixture thickens.
    Cook slowly over low heat (with pan on a heat diffuser if available), stirring briskly once a minute then smoothing over bottom of pan again.
    After a while the Ugali will become stiff and pull away from the sides of the pan.
    Turn Ugali into a cool damp bowl. With dampened hands, shape into a smooth ball and serve.
