Seafood Newburg - cooking recipe

Ingredients
    6 Tbsp. butter
    2 Tbsp. flour
    3 c. cooked lobster, shrimp, scallops, crab or whitefish (single or combination)
    1 tsp. nutmeg
    1 dash paprika
    1 tsp. salt
    3 Tbsp. sherry
    3 egg yolks
    2 c. cream
    toast triangles, rice or pastry shells
Preparation
    Melt butter over low heat in top of double boiler.
    Stir in flour, seafood, nutmeg, salt, paprika and sherry.
    Beat egg yolks slightly in small bowl.
    Add cream; mix well.
    Slowly pour egg mixture into seafood mixture.
    Cook over hot water, stirring until just thickened.
    Serve over toast points, cooked rice or pastry shells.
    Makes 6 servings.
