Pineapple-Pecan Loaf - cooking recipe
Ingredients

3/4 c. brown sugar
1/4 c. shortening
1 egg
2 c. sifted all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 (6 oz.) can frozen orange juice concentrate, thawed (1/3 c.)
1 (8 3/4 oz.) can crushed pineapple (1 c.)
1/2 c. chopped pecans
Preparation

Cream sugar and shortening.
Add egg and beat well.
Sift together flour, soda and salt.
Alternately add dry ingredients and orange concentrate to creamed mixture, stirring after each addition.
Stir in undrained pineapple and pecans.
Turn into well-greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
Bake in oven at 350\u00b0 for 50 to 60 minutes.
Remove from pan.
Cool on rack.
