Portuguese Tuna - cooking recipe

Ingredients
    2 Tbsp. oil
    2 onions, chopped
    2 cloves garlic, minced
    1/2 c. green pepper, chopped
    1/4 c. celery, chopped
    2 Tbsp. parsley, chopped
    salt and pepper
    2 (8 oz.) cans tomato sauce
    1/2 c. water
    1 bay leaf
    2 cans white albacore tuna
    1 strip orange peel (3-inch)
    1/2 tsp. cumin
Preparation
    Heat oil in a large skillet.
    Add onions, garlic, green pepper, celery and parsley; saute until tender.
    Blend in tomato sauce, water, bay leaf, orange peel, cumin, salt and pepper; bring to a boil.
    Reduce heat and simmer 10 minutes.
    Discard orange peel and bay leaf.
    Serve over rice or use to fill warm flour tortillas.
