Easy Shrimp Creole - cooking recipe

Ingredients
    6 c. rice, cooked
    2 lb. shrimp, cooked (popcorn shrimp are fine)
    4 c. tomatoes, chopped
    1 c. water
    1 medium onion, chopped
    1/2 c. chopped celery
    1/2 c. chopped bell pepper
    1/2 tsp. red pepper
    cornstarch or flour, mixed with water for thickening
    sugar or sweetener to taste (if tomatoes are tart)
Preparation
    Saute onion, celery and bell pepper.
    (You can spray with Pam to avoid the extra fat grams from using margarine.) Add this to tomatoes and red pepper.
    Cook 5 to 10 minutes.
    Thicken and sweeten mixture.
    Add shrimp.
    Serve over rice.
    Some like to add a little Tabasco sauce to make it hot.
