Cacciatore Chicken - cooking recipe
Ingredients

1 c. sliced fresh mushrooms
1/2 medium green pepper, cut into strips
1/2 medium onion, thinly sliced
2 Tbsp. water
1/2 c. spaghetti sauce
1/3 c. sliced pitted ripe olives
2 Tbsp. tomato paste
1/4 tsp. garlic powder
2 whole medium chicken breasts, skinned (boneless and halved lengthwise)
Preparation

In a 1 3/4-quart microwave-safe pan, combine mushrooms, green pepper, onion and water.
Cook, uncovered, on 100% power for 2 to 3 minutes or until vegetables are tender.
Drain.
Stir in spaghetti sauce, olives, tomato paste and garlic powder.
Add chicken breasts to casserole, turning to coat with sauce.
Arrange meaty portions toward outside edge of casserole.
Cover and cook on 100% power for 10 to 12 minutes or until chicken is tender. Serve with rice or pasta, if desired.
