Naomi'S Chi Chi'S Salsa - cooking recipe

Ingredients
    16 c. chopped tomatoes
    4 c. chopped onion
    8 c. chopped pepper (red, green or hot)
    1 c. sugar
    2 1/2 c. white vinegar
    1/3 c. pickling salt
    1 1/2 Tbsp. chili powder
    2 tsp. white pepper
    2 tsp. ground cumin
    1 tsp. alum
Preparation
    Mix all ingredients in large kettle.
    Bring to a boil.
    Simmer uncovered 1 1/2 hours, stirring frequently.
    Ladle into jars; seal.
    Process 10 minutes in boiling hot water bath.
    Yields 8 to 10 pints.
