Creole Eggplant - cooking recipe

Ingredients
    1 medium eggplant, peeled and cubed
    1 medium onion, chopped
    1 medium bell pepper, chopped
    1 (8 oz.) can stewed tomatoes
    1 clove minced garlic
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. oregano
    1/8 tsp. Tabasco sauce
    1 lb. Mozzarella cheese
Preparation
    Saute eggplant and onion in 2 tablespoons margarine.
    Mix all ingredients in a skillet and cook, covered, over low heat until vegetables are tender (about 30 minutes). Stir occasionally. Cover with cheese.
    Cook until cheese melts.
