Eggplant Parmesan - cooking recipe

Ingredients
    1 medium eggplant, peeled and sliced
    2 eggs, beaten
    1 c. breading meal
    1 jar Paul Newman's Sockarooni spaghetti sauce
    olive oil
    Mozzarella cheese
Preparation
    Dip each eggplant slice in beaten egg, then in breading meal. Fry slices in olive oil until brown on both sides.
    Drain on paper towel.
