Shrimp Scampi - cooking recipe

Ingredients
    1/4 c. sun-dried tomato pesto
    1 lb. large shrimp, peeled and deveined
    2 tsp. chopped fresh garlic
    1/4 tsp. salt
    1/8 tsp. freshly ground black pepper
    2 Tbsp. freshly squeezed lemon juice
    2 c. cooked rice, warmed
Preparation
    In skillet over medium-high heat, cook sun-dried tomato pesto, stirring, 2 minutes or until fragrant.
    Add shrimp and chopped garlic; cook 5 minutes, stirring constantly or until shrimp turns opaque and is just cooked through.
    Stir in salt, ground black pepper and lemon juice until blended.
    Serve shrimp and sauce over warmed rice.
    Makes 4 servings.
