Corn Bread Dressing With Pecans And Apricots - cooking recipe

Ingredients
    1/2 c. chopped pecans
    1/2 c. butter
    1/4 c. chopped red onion
    1/4 c. celery, finely diced
    1/4 c. dried apricots, finely diced
    1 Tbsp. parsley, chopped
    3 c. dry corn bread crumbs
    1 c. whole wheat bread, diced
    1 tsp. fresh sage or 1/4 tsp. dried sage
    1/4 tsp. pepper
    1 c. chicken stock
Preparation
    Saute pecans in butter until crisp, about 2 minutes.
    Add onion, celery and apricots; cook until soft, about 10 minutes. Stir in parsley.
    Remove from heat and mix with corn bread, wheat bread, sage, pepper and stock.
    Place in a buttered 1 1/2-quart casserole.
    Bake at 325\u00b0 for approximately 45 minutes.
