Lemon Sponge Pie - cooking recipe
Ingredients

3 Tbsp. margarine, softened
1 1/4 c. sugar
4 eggs, separated
3 Tbsp. flour
1 1/4 c. milk
2 Tbsp. grated lemon rind
1/3 c. lemon juice
dash of salt
1 unbaked (10-inch) pastry shell
Preparation

Cream margarine.
Gradually add sugar, beating well.
Add egg yolks, flour, milk, lemon rind, juice and salt.
Beat until smooth.
Beat egg whites (at room temperature) until stiff peaks form.
Fold into lemon mixture.
Pour into pastry shell.
Bake at 375\u00b0 for 15 minutes.
Reduce heat to 300\u00b0 and bake 45 to 50 minutes.
Yield:
one 10-inch pie.
