Ingredients

3 eggs, separated
1 1/2 tsp. vanilla
4 (1 oz.) sq. semi-sweet chocolate, melted and slightly cooled
1/2 tsp. cream of tartar
1/2 c. sugar
1 c. whipping cream
Preparation

Beat egg yolks lightly.
Add vanilla and melted chocolate to egg yolks, stirring well.
Beat egg whites at room temperature. Add cream of tartar at high speed until frothy.
Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves (2 to 4 minutes).
Stir about 1/4 of meringue into chocolate mixture; fold remainder of meringue into chocolate mixture.
Beat whipping cream at medium speed with electric mixer until soft peaks form.
Fold cream into chocolate mixture.
Cover and chill at least 2 hours.
Yields 5 cups.
