Roasted Peppers - cooking recipe

Ingredients
    3 Tbsp. olive or salad oil
    4 garlic cloves, chopped
    3 anchovy fillets, mashed
    1/8 tsp. red pepper, crushed
    pinch of salt
    4 peppers, quartered
Preparation
    In a 2 1/2 quart casserole dish combine oil, garlic, anchovies, red pepper and 1/4 teaspoon salt.
    Add peppers, stirring to coat. Cook, covered on High 14 to 16 minutes until peppers are soft, stirring twice during cooking.
    Serve hot, warm or cold.
    Makes 8 servings.
